Campfire Chicken

Prepare the chicken as any other bird, ensuring it is clean and ready for the oven. I use a store bought stuffing mix and prepare this and stuff the chicken prior to cooking. This allows more food and seems to reduce the amount of grease or oil escaping from the bird.
Wrap the chicken in aluminum foil ensuring the entire chicken is covered. Next wrap the chicken in a layer of wet newspaper. I just dip the paper in the lake or river and then wrap the chicken like making paper Mache’. Wrap the chicken a 2nd time in aluminum foil, again ensuring the paper is completely covered.
Using the campfire I hollow out a spot in the bottom of the fire pit and gently toss the prepared chicken into the hollow. Cover the chicken with fire wood and let the fire do it’s thing. (I try not to get to roaring a fire over the dinner but a medium flame doesn’t seem to harm the cooking process. Leave the chicken in for 45 min for a large game hen or small chicken, 55 min for a medium size bird nd about 65 min for a large chicken.
This is a favorite of mine and I usually take a frozen chicken along to keep the cooler cold on canoe trips and let those on day 3 eating dried lentils beg for real food. I have never burned a chicken cooking this way and have had great success. Good luck!
